Healthy Cucumber & Avocado Salad Recipe

This solid cucumber-avocado salad of mixed greens requires only five minutes to prepare. Lime juice and herbs support the splendid flavors in this crunchy and creamy salad of mixed greens that is an ideal side dish for barbecued chicken, fish or steak. This recipe requires an English cucumber, which doesn’t need to be peeled, however ordinary cucumbers work well too–just peel them before slicing.

Directions

Step 1

Toss shallot rings with lime juice in an large bowl; let remain until softened, around 10 minutes. Whisk in oil, mint, basil and salt. Add cucumber; toss to cover. Allow the cucumber to marinate in the dressing, tossing sometimes, until softened, around 10 minutes.

Step 2

Using a slotted spoon, transfer the cucumber to a platter; top with avocado. Drizzle the dressing over the salad. Serve immediately.
