Cabbage Diet Soup

Stacked with cabbage, carrots, bell pepper, tomato and a lot of preparing, this health vegetable soup packs in bunches of flavor and is super fulfilling. This simple recipe makes a major group for snacks or veggie-stuffed snacks the entire week. If you want to bump up the satisfaction factor even more, top with a little cheddar or avocado.

Directions

Step 1

Warmth oil in an large pot over medium warmth. Add onion, carrots and celery. Cook, blending, until the vegetables start to soften, 6 to 8 minutes. Add bell pepper, garlic, Italian flavoring, pepper and salt and cook, mixing, for 2 minutes.

Step 2

Add broth, cabbage and tomato; increase the warmth to medium-high and heat to the point of boiling. Reduce heat to keep a stew, somewhat cover and cook until every one of the vegetables are tender, 15 to 20 minutes more. Remove from heat and stir in vinegar.

Tips

To make ahead: Refrigerate for up to 4 days. Freeze for up to 3 months.
